Easy Lasagna Soup

A comforting twist on traditional lasagna, this Easy Lasagna Soup combines savory flavors and creamy cheeses in a quick, hearty dish perfect for busy weeknights.

Ingredients

  • 1 lb Ground Beef or Turkey
  • 1 medium Onion, Chopped
  • 2 cloves Garlic, Minced
  • 28 oz Crushed Tomatoes
  • 2 tbsp Tomato Paste
  • 4 cups Chicken or Vegetable Broth
  • 1 tbsp Italian Seasoning
  • 1 tsp Red Pepper Flakes
  • Salt & Pepper to taste
  • 8 oz Lasagna Noodles, Broken into Pieces
  • 1 cup Mozzarella Cheese, Shredded
  • ½ cup Ricotta Cheese
  • Freshly Grated Parmesan Cheese
  • 2 tbsp Olive Oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Brown the ground meat for 5-6 minutes.
  3. Add the chopped onion and minced garlic, sautéing for about 3 minutes.
  4. Incorporate tomato paste, crushed tomatoes, and broth, followed by seasonings.
  5. Bring to a simmer, cooking for 10 minutes.
  6. Add the broken lasagna noodles and cook for 10-12 minutes.
  7. Make it creamy by mixing in mozzarella and ricotta until melted.
  8. Serve in bowls topped with Parmesan cheese.

Notes

If the soup thickens, add more broth or water to reach desired consistency.
