Easy Marry Me Shrimp

A creamy, garlic-infused shrimp dish that combines sun-dried tomatoes, spinach, and parmesan sauce for a romantic dinner.

Ingredients

  • lbs shrimp (peeled, deveined, rinsed)
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp Italian herb blend
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 5 cloves garlic (minced)
  • 1/2 cup white wine
  • 5 oz sun-dried tomatoes (drained, sliced)
  • 1⅓ cups half & half
  • Salt and pepper (to taste)
  • 1/2 cup grated parmesan cheese
  • 1 large handful baby spinach

Instructions

  1. Pat dry the shrimp with paper towels.
  2. Toss the shrimp with salt, paprika, and Italian herb blend in a bowl.
  3. In a skillet, melt butter and olive oil over medium-high heat. Cook the shrimp for 1-2 minutes per side until pink and opaque, then set aside.
  4. Sauté the diced onion for about 3-4 minutes until translucent.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Pour in white wine and add sun-dried tomatoes, sauté for an additional minute.
  7. Add half & half, salt, pepper, and parmesan cheese to create a sauce, bring to a simmer.
  8. Fold in baby spinach and cooked shrimp until spinach wilts.

Notes

Serve with garlic bread, pasta, or a crisp salad. Garnish with fresh parsley.
