Easy Olive Garden Zuppa Toscana Soup

A heartwarming and creamy Italian soup packed with flavor, perfect for chilly days and family gatherings.

  • 1 lb Italian sausage
  • 2 slices thick-cut bacon
  • 1 medium onion, diced
  • 34 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium potatoes, peeled and diced
  • 2 cups fresh kale
  • 1 cup heavy cream
  • 1/2 tsp red pepper flakes
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, add the Italian sausage and chopped bacon. Cook for about 5-7 minutes until browned and cooked through. Remove excess fat but leave some for flavor.
  2. Add in the chopped onion and minced garlic. Sauté for another 3-4 minutes until the onion is translucent and the garlic is fragrant.
  3. Pour in the chicken broth and add diced potatoes. Increase heat to high and bring to a boil.
  4. Reduce heat to low and let it simmer for about 15 minutes, or until potatoes are fork-tender.
  5. Add the kale and heavy cream, stir gently, and heat through for about 2-3 minutes.
  6. Season to taste with red pepper flakes, salt, and pepper. Adjust seasoning as needed.
  7. Ladle into bowls and serve hot.

Notes

Great with crusty bread or a side salad. Can be customized for dietary restrictions.
