Pesto Chicken

Juicy chicken breasts smothered in vibrant basil pesto with melted mozzarella cheese – a simple yet impressive dish that’s ready in 30 minutes!

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/2 cup basil pesto (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 1 tbsp balsamic glaze (optional garnish)
  • Fresh basil leaves for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper.
  2. Heat olive oil in large oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden.
  3. Spread 1-2 tbsp pesto over each chicken breast. Top with mozzarella cheese.
  4. Transfer skillet to oven and bake for 15-18 minutes until chicken reaches 165°F (74°C).
  5. Add tomato halves to skillet during last 5 minutes of baking.
  6. Garnish with fresh basil and drizzle with balsamic glaze before serving.
