Easy Pierogi Casserole with Sausage

A cozy pierogi casserole combining smooth potato and cheese pierogies, hearty smoked sausage, and creamy mushroom sauce for a comforting weeknight meal.

  • 24 oz frozen potato and cheese pierogies
  • 1 lb smoked kielbasa or smoked sausage, sliced into rounds
  • 1 can condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 medium onion, thinly sliced
  • 1 tablespoon olive oil
  • 1/2 cup milk (optional)
  • 2 tablespoons chopped fresh parsley (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9″x13″ casserole dish with cooking spray or butter.
  2. In a skillet over medium heat, heat olive oil. Add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the thinly sliced onion. Sauté until softened and caramelized, about 7-10 minutes. Season with salt and black pepper to taste.
  4. In a bowl, whisk together the cream of mushroom soup, sour cream, and milk (if using). Ensure the mixture is smooth and season with salt and pepper.
  5. In the greased casserole dish, layer half of the frozen pierogies evenly across the bottom. Spread half the sausage, half the sautéed onions, and half the sauce over the pierogies. Sprinkle with 1 cup of shredded cheddar cheese.
  6. Add another layer with the remaining ingredients—pierogies, sausage, onions, sauce, and finish with the last cup of cheese on top.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbling and golden brown.
  9. Let the casserole rest for about 5 minutes before serving. Garnish with fresh chopped parsley and serve with a dollop of sour cream if desired.

Notes

Using high-quality ingredients enhances flavor. You can prep this dish ahead of time and store it in the fridge, just add baking time if chilled.
