Irresistibly Easy Pumpkin Bread with Crumb Topping

A cozy and delicious pumpkin bread topped with a crunchy crumb that captures the flavors of fall.

  • 1 cup Pumpkin puree
  • 1/2 cup Vegetable oil
  • 1/4 cup Water
  • 2 large Eggs
  • 2 cups All-purpose flour
  • 3/4 cup Granulated sugar
  • 3/4 cup Brown sugar
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tbsp Vanilla extract
  • 1 tbsp Pumpkin pie spices
  • 1/2 cup Butter (for crumb topping)
  • 1 cup Brown sugar (for crumb topping)
  • 1 cup Flour (for crumb topping)
  • 1 tsp Cinnamon (for crumb topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two loaf pans.
  2. Mix the dry ingredients in a large bowl.
  3. Combine wet ingredients in a separate bowl until smooth.
  4. Combine wet and dry mixtures, mixing just until smooth.
  5. Make the crumb topping by mixing the dry topping ingredients and cutting in cold butter until crumbly.
  6. Pour the batter into the loaf pans and sprinkle with crumb topping.
  7. Bake for 55 to 65 minutes until a toothpick comes out clean.
  8. Cool the loaves in pans for about 10 minutes before transferring to a wire rack.

Notes

For a lighter option, substitute oil with applesauce. This recipe can also be customized with chocolate chips or nuts.
