Easy Shepherd’s Pie Casserole

This hearty Easy Shepherd’s Pie Casserole features seasoned ground beef, mixed vegetables, and a creamy layer of mashed potatoes, perfect for family gatherings.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until browned (about 5-7 minutes); drain the excess fat.
  3. Add the chopped onion and minced garlic to the skillet; cook until soft, about 3-4 minutes.
  4. Stir in the frozen mixed vegetables, followed by the tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Mix well and let it simmer for 5-7 minutes until slightly thickened.
  5. Transfer the beef mixture to a greased casserole dish, spreading it evenly.
  6. Top with the prepared mashed potatoes, covering the filling completely.
  7. Dot the mashed potatoes with butter and sprinkle with shredded cheddar cheese if desired.
  8. Bake in the preheated oven for 20-30 minutes, until the top is golden and bubbly.
  9. Let it cool for 5 minutes before serving.

Notes

For a vegetarian version, swap ground beef for lentils or mushrooms. This casserole can also be made ahead and frozen for easy meal prep.
