Easy Tomato Basil Galette with Goat Cheese

A rustic French pastry featuring a buttery crust filled with ripe tomatoes, creamy goat cheese, and fresh basil, perfect for summer gatherings.

Ingredients

Scale
  • 1 sheet pie crust (store-bought or homemade)
  • 3 to 4 medium ripe tomatoes (thinly sliced)
  • 1 teaspoon salt
  • 1/2 cup shredded mozzarella or crumbled goat cheese
  • 1/4 cup fresh basil leaves (chopped or torn)
  • 1 tablespoon olive oil (for drizzling)
  • 1 clove garlic (minced or 1/4 tsp garlic powder)
  • 1/4 teaspoon black pepper
  • 1 egg (beaten, optional, for egg wash)

Instructions

  1. Prep the crust: Roll out the dough into a 12-inch circle and refrigerate for 15-20 minutes.
  2. Slice the tomatoes: Thinly slice the tomatoes, sprinkle with salt, and let sit for 10-15 minutes. Pat dry with paper towels.
  3. Assemble the filling: Place the rolled-out dough on parchment paper. Spread cheese over the center, leaving a 2-inch border.
  4. Add tomatoes and basil: Layer tomato slices over cheese, then sprinkle with basil, minced garlic, salt, and black pepper.
  5. Fold the edges: Gently fold the dough edges over the filling.
  6. Brush and bake: Brush with egg wash, drizzle olive oil, and bake at 400°F (200°C) for 35-40 minutes until golden.
  7. Cool and serve: Let rest for 10 minutes before slicing and serve warm or at room temperature.

Notes

For best results, ensure tomatoes are well pat-dried to prevent sogginess. You can customize the filling with seasonal vegetables.
