A scrumptious and healthy twist on the classic turkey club sandwich featuring creamy avocado, crispy bacon, and fresh veggies.

  • 6 slices sourdough bread
  • 6 slices oven-roasted turkey breast
  • 1 ripe avocado
  • 4 slices cooked bacon
  • 4 leaves romaine or iceberg lettuce
  • 1 medium tomato
  • 2 tablespoons mayonnaise (optional)
  • 2 slices cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Toast the Bread: Lightly toast three slices of sourdough bread until golden and crisp, about 2-3 minutes on medium heat.
  2. Cook the Bacon: In a skillet over medium heat, cook bacon until crispy, approximately 5-7 minutes and drain excess grease.
  3. Prep the Avocado: Mash avocado in a bowl with a pinch of salt and pepper or slice it thinly.
  4. Assembly: Spread 1 tablespoon of mayonnaise (if using) on one slice of toasted bread, layer with lettuce, turkey, and mashed avocado.
  5. Add More Layers: On a second slice of bread, layer with tomato slices, crispy bacon, and optional cheese.
  6. Complete the Sandwich: Top with the final slice of bread and gently press.
  7. Slice and Serve: Cut diagonally and secure with picks if needed. Serve immediately.

Notes

For the best crunch, don’t overcrowd your skillet while cooking bacon. If your avocado isn’t ripe, wrap it in a paper bag with a banana or apple to speed up the ripening process.
