Easy Vegan Mushroom Gravy

A simple and soul-satisfying mushroom gravy that elevates any dish with its rich, velvety texture and umami flavor.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat olive oil over medium heat until it shimmers.
  2. Add chopped onion and minced garlic; sauté for about 5 minutes until translucent.
  3. Toss in diced mushrooms and cook for 5-7 minutes until softened.
  4. Stir in flour and cook for 1 minute.
  5. Gradually whisk in vegetable broth until smooth, breaking any lumps.
  6. Add soy sauce and thyme; let it simmer for 5-10 minutes until thickened.
  7. Season with salt and pepper to taste, then serve over your favorite dishes.

Notes

For a creamier texture, add a splash of plant-based milk. This gravy can be made ahead and stored in the fridge for up to 5 days.
