Christmas Tree Focaccia

A festive Italian bread shaped like a Christmas tree, adorned with seasonal produce and flavors.

Ingredients

  • 3 cups bread flour
  • 1/4 tsp active dry yeast
  • 1 1/4 tsp coarse salt
  • 1 2/3 cup warm water
  • 1 ripe pear
  • Pearl onions
  • Cherry tomatoes
  • Thinly sliced red onion
  • Fresh rosemary sprigs
  • Coarse salt for finishing
  • Plenty of olive oil

Instructions

  1. In a large mixing bowl, combine 3 cups bread flour, 1/4 tsp active dry yeast, and 1 1/4 tsp coarse salt. Whisk until well combined.
  2. Gradually add 1 2/3 cup warm water into the mixture. Stir until the dough is shaggy and wet.
  3. Cover the bowl with plastic wrap and a kitchen towel. Let sit on the counter overnight for at least 12 hours.
  4. Preheat your oven to 400°F.
  5. Drizzle olive oil in a 7×12 inch casserole dish.
  6. Tip the risen dough into the dish, gently stretching to fill it.
  7. Dimple the top of the dough, drizzle with olive oil, cover lightly, and let rise for 2 more hours.
  8. Decorate with rosemary sprigs, pear slices, and halved cherry tomatoes.
  9. Sprinkle with coarse salt and drizzle more olive oil.
  10. Bake for 25 minutes until golden and puffed.
  11. Let it rest for a few minutes, then slice and serve warm.

Notes

Use room temperature ingredients for better dough rise; fresh produce is key for flavor.
