  • 4 (6-ounce) tilapia fillets
  • 3 tablespoons extra virgin olive oil, divided
  • 4 cloves garlic, minced
  • 1 large fresh lemon (juice and zest)
  • 1/4 cup dry white wine or chicken broth
  • 1/4 cup fresh herbs (parsley, dill, or basil), finely chopped
  • 2 tablespoons unsalted butter, cubed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat tilapia fillets dry and season both sides with salt and black pepper.
  2. Heat 2 tablespoons olive oil in skillet over medium-high heat. Cook fillets 3-4 minutes per side until golden and flaky. Transfer to plate and cover.
  3. Reduce heat to medium. Add remaining 1 tablespoon oil, garlic, and red pepper flakes. Sauté 30-60 seconds until fragrant.
  4. Pour in white wine or broth to deglaze pan, simmer 1-2 minutes until reduced by half.
  5. Remove from heat. Stir in lemon juice and zest.
  6. Whisk in butter until melted and sauce is emulsified.
  7. Stir in fresh herbs and adjust seasoning.
  8. Pour sauce over tilapia and serve immediately.
