  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup fresh orange juice
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Cook the Penne Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and let cool completely.
  2. Combine the Ingredients: In a large mixing bowl, combine the cooled penne, crumbled feta cheese, dried cranberries, chopped walnuts, and chopped parsley. Gently fold everything together.
  3. Make the Vinaigrette: In a separate bowl, whisk together olive oil, fresh orange juice, honey, salt, and pepper. Taste and adjust seasoning if needed.
  4. Combine and Toss: Pour the vinaigrette over the salad and toss gently to coat all ingredients.
  5. Serve: Chill for at least 30 minutes before serving. It can be served chilled or at room temperature.
