  • 1 pound Fettuccine Pasta
  • 2 sticks unsalted Butter
  • 1 cup Heavy Cream
  • Salt, Pepper, & Garlic Salt to taste
  • 1/2 cup Romano Cheese, grated
  • 1/2 cup Parmesan Cheese, grated

Instructions

  1. Bring a large pot of salted water to a boil. Add fettuccine and cook according to package instructions, about 10 minutes or until al dente.
  2. Drain the pasta, reserving ½ cup of pasta water. Set aside.
  3. In a large skillet over medium heat, melt the butter, swirling gently to prevent burning.
  4. Once melted, add the heavy cream, salt, pepper, and garlic salt. Stir and let it simmer for 2-3 minutes until thickened.
  5. Stir in the Romano and Parmesan cheeses until smooth, about 2 minutes.
  6. Toss the cooked fettuccine in the sauce, adding pasta water as needed to reach desired consistency.
  7. Serve immediately, garnished with additional Parmesan cheese and fresh parsley if desired.

Notes

For best results, use freshly grated cheeses and let the butter sit at room temperature before cooking.
