Flaky Brown Sugar Apple Pie

A comforting classic apple pie with a unique blend of brown sugar and spices for a rich, caramelized filling and a flaky crust.

  • 1 homemade double crust (2 sheets pie dough)
  • 5 lbs apples (Granny Smith and Honeycrisp mix)
  • 1/4 tsp grated lemon peel
  • 2 tbsp fresh lemon juice
  • 3/4 cup packed brown sugar
  • 3/4 cup white sugar
  • 5 tbsp all-purpose flour
  • 1/4 tsp kosher salt
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground nutmeg
  • 1/2 tsp ground cardamom (optional)
  • 1 tsp vanilla extract
  • 1 tbsp milk (for brushing crust)
  • 1 tbsp beaten egg (optional, for brushing)
  • 1 tbsp turbinado sugar (for sprinkling)

Instructions

  1. Chill butter for at least 30 minutes, then mix dry ingredients and cut in the butter until crumbly.
  2. Add ice water gradually until dough forms; wrap and chill for at least 1 hour.
  3. Preheat oven to 425°F (220°C). Peel, core, and slice apples; mix with lemon juice, peel, sugars, flour, salt, and spices.
  4. Roll out crust, fit into a pie pan, pour in apple filling, cover with second crust, seal and vent.
  5. Brush top with milk or egg, sprinkle with sugar, bake for 15 minutes, then reduce to 350°F (175°C) for 45-50 minutes.

Notes

Allow pie to cool for at least an hour before slicing for cleaner cuts.
