Pumpkin, Ricotta & Caramelized Onion Tart with Bacon and Sage

  • 1 sheet high-quality puff pastry
  • 1 cup pumpkin puree
  • 1 cup ricotta cheese
  • 1 large onion, caramelized
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons fresh sage, chopped
  • Salt and pepper, to taste
  • 1 egg, beaten

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a parchment-lined baking sheet to a 12-inch square.
  3. Mix pumpkin puree with ricotta, salt, and pepper until smooth.
  4. Spread the mixture over the pastry, leaving a 1-inch border.
  5. Sprinkle caramelized onions and crumbled bacon on top.
  6. Add chopped sage evenly over the tart.
  7. Fold the edges of the pastry over the filling to create a rustic border.
  8. Brush edges with beaten egg.
  9. Bake for 25-30 minutes until the pastry is puffed and golden.
  10. Let it cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen uncooked for up to 2 months.
