Instructions

  1. Separate the egg whites and yolks in a bowl, ensuring no yolk gets into the whites for the best volume.
  2. Whisk the egg yolks, milk, and vanilla until well combined.
  3. Sift in the flour, baking powder, sugar, and salt, and whisk until you achieve a smooth batter.
  4. Beat the egg whites until stiff peaks form, about 4-6 minutes with an electric mixer.
  5. Fold the egg whites into the yolk mixture gently using a spatula.
  6. Preheat a non-stick skillet over low heat and lightly grease it with butter.
  7. Scoop a large spoonful of the batter onto the skillet and cover with a lid.
  8. Cook for about 4-5 minutes, checking for a golden-brown underside, then flip and cook for another 4-5 minutes.
  9. Serve warm with fresh fruit, syrup, or powdered sugar.

Notes

Use room temperature eggs and milk for better aeration. Cook at low heat for perfect fluffiness.
