Delicious Freezer Breakfast Burritos

Transform your hectic mornings with these easy and delicious freezer breakfast burritos, packed with bacon, eggs, cheese, and veggies.

  • 8 large flour tortillas
  • 8 large eggs
  • ½ cup milk (optional)
  • 8 slices bacon
  • 1 cup shredded cheddar cheese
  • 1 cup frozen hash browns
  • ½ cup bell pepper, diced and sautéed
  • ½ cup onion, diced and sautéed
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook your bacon until crisp (around 8-10 minutes). Transfer to a paper towel-lined plate and crumble once cooled.
  2. Add a splash of olive oil to the same skillet and sauté the diced bell pepper and onion until softened, about 4-5 minutes. Set aside.
  3. Prepare hash browns according to package instructions until golden and crisp, about 6-8 minutes. Set aside.
  4. In a bowl, whisk together eggs, milk, salt, and pepper. Pour the mixture into a nonstick skillet over medium heat and scramble gently until fully cooked but still soft, around 5 minutes. Remove from heat.
  5. Warm the tortillas in the microwave for 10 to 15 seconds to prevent cracking.
  6. Lay each tortilla flat, and divide the eggs, crumbled bacon, cheese, cooked hash browns, and sautéed veggies evenly across the tortillas.
  7. Fold in the sides and roll tightly from the bottom up. Wrap each burrito in foil or parchment paper.
  8. Place the wrapped burritos into a freezer-safe bag or container and freeze for up to 3 months.
  9. To reheat, unwrap from foil, wrap in a paper towel, and microwave for 1 to 2 minutes per side, flipping halfway.
