Irresistible French Chicken Casserole

A cozy family favorite, this French Chicken Casserole combines tender chicken with the sweet and savory flavors of apple cider and apples for a comforting meal perfect for gatherings.

  • 4 chicken thighs, skin-on
  • 4 chicken legs
  • 2 cups apple cider
  • 2 apples, sliced (preferably Granny Smith)
  • 2 tablespoons butter, room temperature
  • Salt and pepper, to taste
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large Dutch oven, heat olive oil over medium heat. Season chicken with salt and pepper, then brown on all sides for 5-7 minutes. Remove chicken and set aside.
  3. Add butter, sauté onions and garlic in the same pot for 3-4 minutes until fragrant.
  4. Pour in apple cider, bring to a simmer, scraping any brown bits from the bottom of the pot.
  5. Return chicken to the pot, sprinkle with thyme, cover, and bake for about 1 hour or until chicken is cooked through (internal temp 165°F / 74°C).
  6. Slice apples and fry in a skillet with a bit of olive oil for about 5 minutes until golden and tender.
  7. Serve casserole topped with caramelized apple slices.
