Perfectly Soft Flour Tortillas Made With Fresh Milled Flour

  • 576 grams fresh milled soft white wheat flour (approx. 6 cups)
  • 113 grams melted unsalted butter (8 tablespoons)
  • 360 grams hot tap water (1 1/2 cups)
  • 1 1/2 teaspoons salt

Instructions

  1. In a stand mixer bowl, combine fresh milled flour and salt on low speed.
  2. Pour in melted butter and hot water, kneading the dough for 3-5 minutes until smooth.
  3. Divide the dough into 9 equal pieces (approx. 4 oz each) and form into balls.
  4. Cover with plastic wrap and rest for 30 minutes at room temperature.
  5. Preheat a cast iron press or pan to around 450°F-500°F.
  6. Press each dough ball on the hot press covered with parchment paper, cooking until golden brown on both sides.
  7. Store cooked tortillas in a clean towel and enjoy!

Notes

Do not rush the resting time as it is crucial for pliability. Experiment with different flavors by adding spices directly into the dough.
