Irresistible Fried Vermicelli Noodles

A comforting Asian dish made with soft and slightly chewy vermicelli noodles, vibrant vegetables, and tender chicken, creating a flavor explosion that evokes nostalgia.

  • 200g vermicelli noodles
  • 2 cups leafy greens (e.g., bok choy or spinach)
  • 200g chicken breast, sliced
  • 2 eggs, beaten
  • 1 cup bean sprouts
  • 4 cloves garlic, minced
  • 3 tablespoons sweet soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Soak the noodles in hot water for about 10 minutes, then drain and set aside.
  2. Heat 2 tablespoons of vegetable oil in a large pan or wok over medium heat.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the sliced chicken breast and cook until no longer pink, about 5-7 minutes.
  5. Push the chicken to one side and scramble the beaten eggs on the other side for about 2 minutes.
  6. Add the drained noodles, leafy greens, bean sprouts, and sweet soy sauce, and stir-fry for about 5-7 minutes.
  7. Taste and season with salt and pepper as needed.
  8. Serve hot, garnished with extra bean sprouts or sesame seeds if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For meal prep, you can prepare chicken and vegetables ahead of time.
