The Best Fudgy Chewy Brookies Recipe

  • 100g Dark Chocolate (70% cacao)
  • 50g Chocolate Chips (optional)
  • 120g Plain Flour
  • 50g Demerara Sugar
  • 50g Caster Sugar
  • 120g Butter (salted or unsalted)
  • 25g Cocoa Powder
  • 2 Large Eggs (room temperature)

Instructions

  1. In a small saucepan over low heat, melt 120g butter and 100g dark chocolate, stirring continuously until smooth. Remove from heat.
  2. In a separate bowl, whisk 2 large eggs, 50g demerara sugar, and 50g caster sugar until light, pale, and fluffy—about 3-5 minutes.
  3. In another bowl, whisk 25g cocoa powder and 120g plain flour together to avoid lumps.
  4. Slowly pour the melted chocolate mixture into the egg mixture, stirring gently to prevent scrambling the eggs.
  5. Carefully fold the flour-cocoa mix and chocolate chips (if using) into the batter until thick and gloopy.
  6. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  7. Using tablespoons, drop well-spaced mounds of batter onto the tray.
  8. Bake in the preheated oven for 12-14 minutes until the edges look firm but the centers are soft.
  9. Allow to cool on the tray for a few minutes; sprinkle with sea salt if desired.

Notes

Store brookies in an airtight container at room temperature for up to 3 days. They freeze well too! Consider adding nuts or peanut butter for variations.
