Savory Garlic Butter Pasta

A delightful, creamy pasta dish featuring roasted garlic and butter, perfect for a cozy family dinner or a romantic date night.

  • 2 whole garlic bulbs (peeled)
  • 1/2 cup olive oil
  • 1/2 cup softened vegan butter (or regular)
  • 1 tbsp tomato paste
  • 3 tbsp grated vegan parmesan (or regular)
  • Small handful fresh basil, finely chopped
  • Salt and freshly ground black pepper, to taste
  • 400 g spaghetti (or any pasta you like)
  • 1 cup pasta’s cooking water
  • Extra parmesan, basil, and toasted breadcrumbs for topping (optional)

Instructions

  1. Slow-roast the garlic by placing peeled cloves in a saucepan with olive oil and cooking on low heat for about 20 minutes.
  2. Make the compound butter by blending roasted garlic with softened butter, salt, pepper, tomato paste, parmesan, and chopped basil.
  3. Cook the pasta in salted boiling water, reserving 1 cup of cooking water before draining.
  4. Finish the dish by combining hot pasta with garlic compound butter and a splash of pasta water, tossing until glossy.
  5. Serve topped with extra parmesan, fresh basil, and toasted breadcrumbs if desired.

Notes

Ensure the butter is at room temperature for smooth blending. Store leftovers in an airtight container for up to 3 days.
