Slow-Cooked Garlic Parmesan Chicken and Potatoes

A cozy and rich dish featuring tender chicken and buttery potatoes slow-cooked in garlic Parmesan sauce.

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash and halve the baby potatoes.
  2. Mince the garlic and set aside.
  3. In a small bowl, mix olive oil, Italian seasoning, salt, black pepper, and red pepper flakes.
  4. Rub the mixture over the chicken breasts.
  5. Place the halved potatoes at the bottom of the crockpot.
  6. Pour chicken broth over the chicken and potatoes.
  7. Sprinkle minced garlic and grated parmesan cheese over the top.
  8. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  9. Remove chicken and potatoes, spoon sauce over the top, and garnish with parsley.

Notes

For best results, use a meat thermometer to check chicken doneness. Leftovers can be stored for up to 4 days in the fridge.
