Garlic Parmesan Meatloaves

  • 1 pound ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 garlic cloves, minced
  • 1 egg
  • 1/4 cup milk
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup marinara sauce
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, minced garlic, egg, milk, parsley, oregano, onion powder, salt, and pepper. Mix thoroughly until well combined.
  3. Divide the mixture into equal portions and shape them into mini loaves. Place them on a baking sheet lined with parchment paper.
  4. Bake in the oven for about 20 minutes.
  5. After 20 minutes, remove the meatloaves and spoon marinara sauce over each one. Sprinkle shredded mozzarella cheese on top, and return to the oven for an additional 10-15 minutes, or until the internal temperature reaches 165°F (74°C).

Notes

For added flavor, consider marinating the ground chicken before mixing or adding finely chopped vegetables to the mixture.
