24 lasagna noodles
4 cups cooked chicken, shredded
4 cups spinach, chopped
4 cups ricotta cheese
4 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
A few black olives, sliced
6 cups marinara sauce
Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
Cook the 24 lasagna noodles according to package instructions. Drain and set aside.
In a mixing bowl, combine 4 cups of ricotta cheese with 4 cups of chopped spinach; season with salt and pepper and mix until smooth.
In a baking dish, spread a thin layer of 6 cups of marinara sauce on the bottom. Layer as follows: noodles, ricotta-spinach mix, shredded chicken, mozzarella, marinara. Repeat layers until ingredients are used up, finishing with noodles, marinara, and mozzarella.
Cut mozzarella into ghost shapes and place on top of the lasagna. Add olive slices for eyes.
Cover with foil and bake for 30 minutes, uncover and bake for an additional 10-15 minutes until golden and bubbly.
Notes
Allow the lasagna to sit for about 10 minutes before slicing for easier serving.
