Ghostly Mac & Cheese

A festive twist on classic mac and cheese featuring ghost-shaped pasta and creamy cheeses, perfect for Halloween celebrations.

  • 1 pound ghost-shaped pasta
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon smoked paprika
  • Pinch of cayenne pepper
  • 4 cups whole milk
  • 4 ounces cream cheese, softened and cubed
  • 4 cups sharp white cheddar cheese, freshly grated
  • 2 cups Gruyere cheese, freshly grated
  • 1 cup panko breadcrumbs
  • 2 tablespoons melted unsalted butter
  • 2 black olives, finely minced

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Cook the ghost-shaped pasta in a pot of salted boiling water until al dente (about 7-8 minutes). Drain and set aside.
  3. In a large pot over medium heat, melt the butter. Whisk in the flour to create a roux, cooking for about 2 minutes until it’s bubbling and just slightly golden.
  4. Gradually whisk in the milk, stirring constantly to prevent lumps. Continue to cook until the mixture thickens, approximately 5-7 minutes.
  5. Add the cream cheese and whisk until melted and smooth. Stir in the cheddar and Gruyere, allowing them to melt fully.
  6. Fold in the cooked pasta, mixing gently to coat all the ghostly shapes in the cheese sauce.
  7. Pour the creamy mixture into your greased baking dish. Combine panko breadcrumbs with melted butter and sprinkle evenly over the top.
  8. Bake for 25-30 minutes or until bubbling and golden brown on top.
  9. Garnish with minced black olives before serving. Serve warm.
