  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 3 cups milk (whole or 2%)
  • 2 cups shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1012 slices mozzarella (for ghostly shapes)
  • Sesame seeds or peppercorns (for eyes)
  • Optional: Extra cheddar or breadcrumbs for topping

Instructions

  1. Cook the Pasta: Boil salted water, add pasta, and cook until al dente (7-8 mins). Drain.
  2. Make the Cheese Sauce: Melt butter in a saucepan, add flour to form a roux (cook 2 mins).
  3. Add the Milk: Gradually whisk in milk and cook until thickened (about 5 mins).
  4. Stir in Cheeses: Remove from heat, mix in cheddar and Parmesan until smooth. Season.
  5. Combine: Fold pasta into cheese sauce ensuring it’s well coated.
  6. Transfer to Casserole: Pour into a buttered dish and smooth the top.
  7. Prepare Ghosts: Cut mozzarella into ghost shapes and place on top. Add eyes.
  8. Bake: Preheat oven to 375°F (190°C) and bake for 20-25 mins until bubbly.
