Ultimate Gingerbread Cake with Cream Cheese Frosting

  • 1 cup brown sugar (packed)
  • ½ cup granulated sugar
  • 1 cup unsweetened applesauce
  • ½ cup molasses
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 3 large eggs
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine flour, brown sugar, granulated sugar, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, whisk together applesauce, molasses, vegetable oil, buttermilk, eggs, and vanilla until smooth.
  4. Gradually mix wet ingredients into dry ingredients, stirring gently.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 30-35 minutes, until a toothpick inserted comes out clean.
  7. Allow the cake to cool completely before frosting.

Notes

For best results, ensure eggs and buttermilk are at room temperature. Can substitute some flour for whole wheat or almond flour.
