  • 1 ¾ cup all-purpose flour (210 g)
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¾ cup unsalted butter (for frosting, softened)
  • 23 cups powdered sugar (adjust for desired sweetness)
  • 4 oz cream cheese (slightly softened)
  • 1 teaspoon pure vanilla extract (for frosting)
  • 2 tablespoons unsulphured molasses (for frosting)
  • 1 teaspoon cinnamon (for frosting)
  • 1 teaspoon ginger (for frosting)
  • 12 mini gingerbread men cookies (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. In a large bowl, cream together the softened butter, vegetable oil, and brown sugar until fluffy. Add in the vanilla extract, then beat in the eggs one at a time.
  3. Stir in the molasses and buttermilk until well combined.
  4. In a separate bowl, whisk together the ground ginger, cinnamon, nutmeg, cloves, cardamom, flour, baking powder, and baking soda.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill each cupcake liner about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
  7. In a medium bowl, beat the softened butter and cream cheese together until creamy. Gradually sift in the powdered sugar, mixing until fluffy. Mix in the vanilla extract, molasses, cinnamon, and ginger until well blended.
  8. Once the cupcakes are cooled, frost them generously with your homemade cream cheese frosting.

Notes

For best results, ensure your butter and eggs are at room temperature. You can substitute the buttermilk with a mixture of milk and vinegar if needed.
