Irresistibly Soft and Spiced Gingerbread Muffins

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 2 large eggs
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Mix in the molasses and eggs until well combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool for about 5 minutes before transferring to a wire rack.

Notes

Store muffins in an airtight container for up to 3 days or freeze for longer storage.
