  • 1 cup rolled oats
  • 1/2 cup chocolate chips
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix almond flour, rolled oats, baking soda, and salt in a bowl.
  3. In a separate bowl, whisk together maple syrup, melted coconut oil, vanilla extract, and egg.
  4. Combine wet and dry ingredients, mixing until well combined.
  5. Fold in the chocolate chips.
  6. Drop spoonfuls of cookie dough onto a lined baking sheet.
  7. Bake for 10-12 minutes until edges are golden brown.
  8. Let cool before transferring to a wire rack.

Notes

For vegan options, substitute egg with a flax egg or unsweetened applesauce.
