A hearty gluten-free breakfast casserole that combines eggs, gluten-free bread, and colorful vegetables for a delicious and comforting meal.

  • 68 slices Gluten-Free Bread
  • 6 large Eggs
  • 1 cup Milk (dairy or non-dairy)
  • 1 cup shredded Cheese (Cheddar, mozzarella, or a mix)
  • Vegetables (bell peppers, onions, spinach or your choice)
  • Salt & Pepper to taste
  • Olive Oil or Butter (for greasing)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking dish with olive oil or butter.
  2. Cut the gluten-free bread into cubes and spread evenly in the baking dish.
  3. In a large bowl, beat together the eggs, milk, salt, and pepper.
  4. Fold in the chosen vegetables and half of the cheese into the egg mixture.
  5. Pour the mixture over the bread cubes, pressing gently to absorb.
  6. Sprinkle the remaining cheese on top.
  7. Bake in the oven for 30-35 minutes, until eggs are set and top is golden brown.
  8. Let it rest for about 10 minutes before slicing.

Notes

For best results, use high-quality gluten-free bread and let it dry out before using. You can make it ahead of time and bake fresh in the morning.
