Gluten Free Pumpkin Spice Scones

  • 2 cups gluten free flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1 large egg

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together gluten free flour, sugar, baking powder, pumpkin spice, and salt until smooth.
  3. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
  4. In another bowl, combine pumpkin puree, milk, and egg; mix until smooth.
  5. Stir this mixture into the dry ingredients until just combined.
  6. Turn the dough out onto a lightly floured surface and gently knead until it comes together.
  7. Pat the dough into a circle about 1 inch thick and cut into wedges or round shapes.
  8. Place scones on a baking sheet lined with parchment paper.
  9. Bake for 15-20 minutes or until golden brown.
  10. Let cool slightly before serving.

Notes

For extra moisture, add 1-2 tablespoons of yogurt. Store in an airtight container for up to 3 days at room temperature.
