S’mores Cookies

A delightful twist on the classic campfire treat, these S’mores Cookies combine rich chocolate, crunchy graham crackers, and fluffy marshmallows in a soft and chewy cookie form.

  • 1 cup unsalted butter, room temperature
  • 1 cup dark brown sugar
  • 1/2 cup white sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup bittersweet chocolate chunks
  • 4 graham crackers, broken in half
  • 2 Hershey’s chocolate bars
  • 8 large marshmallows, cut in half

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the butter and sugars in a large mixing bowl until light and fluffy.
  3. Add the eggs and vanilla extract, and mix until fully blended.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just incorporated.
  6. Fold in the semisweet and bittersweet chocolate chips.
  7. Chill the dough in the refrigerator for about 30 minutes.
  8. Line baking sheets with parchment paper.
  9. Assemble cookies by placing graham cracker halves on the sheet and topping them with chocolate pieces and a marshmallow half, then scoop cookie dough over the mound.
  10. Bake for 12 to 15 minutes until the edges are golden brown.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best results, make sure to chill the dough and do not overmix. These cookies store well in an airtight container for up to a week.
