Greek Cucumber Tomato Salad with Feta

A vibrant salad featuring crunchy cucumbers, juicy tomatoes, tangy feta, and Kalamata olives, perfect for summer gatherings.

Ingredients

  • 2 cups cucumbers, diced
  • 2 cups tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled or cubed
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large bowl, combine cucumbers, tomatoes, red onion, and Kalamata olives.
  2. Gently fold in feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to coat.
  5. Garnish with fresh basil leaves if desired and serve immediately.

Notes

Store leftover salad in an airtight container in the fridge for up to 3 days. It’s best enjoyed fresh!
