Green Bean Casserole

A comforting twist on the classic Green Bean Casserole, these savory Gratins feature a creamy filling, tender green beans, and crispy onions. Perfect for gatherings and easy to enjoy!

  • pounds green beans (trimmed and halved)
  • 2 tablespoons extra-virgin olive oil
  • 16 ounces cremini mushrooms (sliced)
  • 2 tablespoons tamari or soy sauce
  • 4 garlic cloves (minced)
  • 2 tablespoons fresh thyme leaves
  • ¼ cup all-purpose flour
  • 3 cups milk
  • 1½ teaspoons Dijon mustard
  • ½ cup grated Parmesan cheese (plus more for sprinkling)
  • ¼ teaspoon freshly ground black pepper
  • 1½ cups French fried onions

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. Blanch the green beans in boiling salted water for 4 minutes, then transfer to ice water.
  3. In a skillet, heat olive oil and sauté sliced mushrooms until soft and golden brown (8-10 minutes).
  4. Add tamari, minced garlic, and thyme to the skillet, cooking for an additional minute.
  5. Sprinkle flour over the mixture and cook for another minute.
  6. Gradually whisk in milk and Dijon mustard, cooking until thickened (15-20 minutes). Stir in Parmesan and black pepper.
  7. Spread ⅓ of the sauce in the baking dish, layer the green beans, top with remaining sauce and sprinkle with French fried onions.
  8. Cover with foil and bake for 10 minutes, then uncover and bake for an additional 10 minutes.
  9. Garnish with extra Parmesan before serving.

Notes

These Gratins can be prepared ahead of time and stored in the fridge for up to 3 days. Freeze for longer storage.
