Green Bean Salad with Goat Cheese and Nuts

A vibrant mix of fresh green beans, radicchio, and creamy goat cheese, perfect for summer gatherings.

Ingredients

  • 1 pound green beans, trimmed
  • ½ head radicchio, sliced into strips
  • Scant ¼ cup thinly sliced red onion
  • Honey Mustard Dressing, for drizzling
  • 2 ounces goat cheese
  • 2 tablespoons chopped walnuts
  • 2 tablespoons sliced almonds
  • ¼ cup fresh tarragon
  • Flaky sea salt, to taste

Instructions

  1. In a large pot, bring salted water to a rolling boil.
  2. Prepare a bowl of ice water.
  3. Drop green beans into boiling water and cook for 2 minutes.
  4. Quickly transfer green beans to ice water for 15 seconds to cool.
  5. In a large bowl, combine green beans, radicchio, onion, and a few spoonfuls of the Honey Mustard Dressing.
  6. Arrange bean mixture on a platter, top with goat cheese, walnuts, almonds, and tarragon.
  7. Drizzle with additional dressing and sprinkle with flaky sea salt.

Notes

This salad is best enjoyed fresh, but can last in the fridge for up to 2 days if stored in an airtight container. Keep the dressing separate until ready to serve.
