Ingredients
Scale
1500 grams beef sirloin steak, cut into 15 cm cubes
1 red bell pepper, cut into pieces
1 green bell pepper, cut into pieces
1 red onion, cut into pieces
1 zucchini, sliced thickly
1/4 cup olive oil
3 tablespoons soy sauce
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon black pepper
Salt to taste
Wood or metal skewers
Instructions
Marinate beef: Combine all marinade ingredients in a bowl. Reserve 1/4 cup for basting. Add beef cubes to remaining marinade, cover, and refrigerate 2-24 hours.
Prep grill: Preheat grill to medium-high (400°F/200°C).
Skewer: Thread beef alternately with vegetables onto skewers.
Grill: Cook skewers 8-10 minutes total, turning every 2 minutes, until beef reaches desired doneness (125°F/52°C for medium-rare). Baste with reserved marinade during last 2 minutes.
Rest: Let rest 5 minutes before serving.
Notes
Cutting tip: Slice beef against the grain before cubing for extra tenderness.
Wooden skewers: Soak in water 30 minutes to prevent burning.
Oven option: Broil on high rack 6-8 minutes, turning once.
For even cooking, keep similar-sized pieces on each skewer.
