Grilled Chicken with Green Sauce

Juicy grilled chicken breasts served with a vibrant herb-packed green sauce – a healthy, flavorful dish perfect for weeknight dinners or summer barbecues.

    • 4 Jalapeño chiles
    • 2 tablespoons Ají amarillo paste
    • 1 cup Fresh cilantro leaves
    • 3 cloves Garlic
    • ½ cup Mayonnaise
    • ½ cup Sour cream
    • 2 tablespoons Fresh lime juice
    • 2 tablespoons White vinegar
    • ¼ cup Extra virgin olive oil
    • 1 Whole chicken (about 4 pounds)
    • 2 teaspoons Kosher salt
    • 1 teaspoon Ground cumin
    • 1 teaspoon Paprika
    • ½ teaspoon Black pepper
    • 3 Fresh garlic cloves
    • 2 tablespoons Vegetable oil

Instructions

  1. Preheat grill to medium-high heat (400°F/200°C).
  2. Rub chicken with olive oil, salt, pepper, garlic powder and paprika.
  3. Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F (74°C).
  4. While chicken cooks, blend all green sauce ingredients until smooth.
  5. Let chicken rest 5 minutes before slicing.
  6. Serve drizzled with green sauce.

Notes

  • For spicier sauce: add ½ jalapeño
  • Can substitute cilantro with basil if preferred
  • Chicken can be pan-seared if no grill available
  • Sauce keeps refrigerated for 3 days
