Ingredients

– 2 lbs Beef Sirloin Steak, cut into 1.5-inch cubes

– 1/2 cup Extra Virgin Olive Oil

– 1/3 cup Freshly Squeezed Lemon Juice

– 1 tablespoon Lemon Zest

– 4 cloves Garlic, minced

– 2 tablespoons Fresh Rosemary, finely chopped

– 2 tablespoons Fresh Thyme, leaves removed from stems

– 1/4 cup Fresh Parsley, chopped

– 1 teaspoon Sea Salt

– 1/2 teaspoon Black Pepper, freshly ground

– Wooden or Metal Skewers

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, lemon zest, salt, and pepper.
  2. Add beef cubes to the marinade, toss to coat, and refrigerate for at least 1 hour (or up to 4 hours).
  3. Preheat grill to medium-high heat. Soak wooden skewers in water for 20 minutes to prevent burning.
  4. Thread marinated beef and vegetables alternately onto the skewers.
  5. Grill skewers for 8-10 minutes, turning occasionally, until beef is cooked to your desired doneness and vegetables are tender.
  6. Remove from grill and let rest for 5 minutes before serving.

Notes

  • For best results, do not overcrowd the skewers to ensure even cooking.
  • Serve with a side of rice, quinoa, or a fresh salad.
  • If using wooden skewers, soak them for at least 20 minutes to prevent burning.
