The Ultimate Grilled Peach Salad

A sweet and savory summer salad featuring caramelized peaches, creamy feta, and crunchy walnuts, all drizzled with a zesty vinaigrette.

  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 1 tbsp extra virgin olive oil
  • 1 tbsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp red chili flakes
  • 4 peaches, halved and pitted
  • 2 cups arugula
  • 1 cup basil leaves, thinly sliced or torn
  • 1 cup red onion, thinly sliced
  • ½ cup walnuts, toasted
  • ½ cup feta cheese, crumbled

Instructions

  1. Prepare the Peaches: Halve each peach with a sharp knife and remove the pit. Set aside.
  2. Heat the Grill: Preheat the grill to medium-high (about 400°F).
  3. Oil and Grill: Brush the cut sides of the peaches and grill grates with olive oil.
  4. Grill the Peaches: Place peaches cut side down on the grill for 3-4 minutes until grill marks form. Let cool.
  5. Make the Vinaigrette: Whisk together apple cider vinegar, maple syrup, olive oil, Dijon mustard, salt, and red chili flakes.
  6. Combine the Salad: In a large bowl, toss arugula, basil, red onion, walnuts, grilled peaches, and feta. Drizzle with vinaigrette and gently toss.
  7. Serve Immediately: Enjoy the salad fresh for optimal flavors and textures!

Notes
