  • 4 crusty rolls (ciabatta or French)
  • 1 large onion, thinly sliced
  • 1 tbsp butter
  • 4 slices provolone or Swiss cheese
  • 1/2 cup arugula or spinach
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 tbsp chopped fresh herbs (rosemary/thyme)

Instructions

  1. Prep Pork: Mix paprika, garlic powder, brown sugar, salt, and pepper. Rub pork with oil, then spice mix. Let sit 15 minutes.
  2. Grill Pork: Preheat grill to medium-high (400°F). Grill pork 15-20 minutes, turning occasionally, until internal temp reaches 145°F. Rest 10 minutes before slicing.
  3. Caramelize Onions: Cook onions in butter over low heat 20 minutes until golden.
  4. Make Sauce: Mix mayo, mustard, honey, and herbs.
  5. Assemble: Toast rolls. Spread sauce on both sides. Layer pork slices, onions, cheese (melt under broiler if desired), and greens.
  6. Serve: Cut sandwiches in half and serve warm.
