  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice

Instructions

  1. In a bowl, combine shrimp, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to marinate for 15-20 minutes.
  2. Preheat the grill to medium-high heat.
  3. Drizzle asparagus with olive oil, salt, and pepper, then set aside.
  4. Grill asparagus for 4-5 minutes until tender and slightly charred, then set aside.
  5. Grill marinated shrimp for 2-3 minutes on each side until pink and opaque.
  6. Meanwhile, mix Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper to make the garlic sauce.
  7. Assemble the bowl with quinoa or rice, topped with grilled asparagus, shrimp, and drizzle with creamy garlic sauce.
  8. Garnish with fresh parsley before serving.

Notes

Shrimp can be marinated for extra flavor. Serve immediately for best taste.
