Savory Ground Beef Casserole with Potatoes

  • 4 lbs russet potatoes, peeled and sliced
  • 1 lb ground beef
  • 1 onion, diced
  • 1 can (10 oz) cream of chicken soup
  • 1 can (12 oz) evaporated milk
  • 1/2 cup milk
  • 2 teaspoons salt, divided
  • 1 teaspoon pepper, divided
  • 2 teaspoons onion powder
  • 4 cups cheddar cheese, shredded

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef with the diced onion, seasoning with 1/2 teaspoon of salt and 1/4 teaspoon pepper. Cook until the beef is no longer pink (about 6-8 minutes). Drain any excess grease.
  3. In a mixing bowl, whisk together the cream of chicken soup, evaporated milk, milk, 1 teaspoon salt, 1/4 teaspoon pepper, and onion powder.
  4. Grease a 9×13-inch baking dish. Layer one-third of the sliced potatoes, followed by one-third of the ground beef mixture, and sprinkle with 1 cup of cheddar cheese. Repeat layers until all ingredients are used.
  5. Pour the milk mixture over the top of the layers.
  6. Cover with aluminum foil and bake for 1 hour. For a crispier top, uncover and bake for an additional 15 minutes.
  7. Check for tenderness; if potatoes are cooked, sprinkle remaining cheese on top and return to oven for an additional 5 minutes, or until melted.
  8. Let it rest for 15 minutes before serving.

Notes

For extra flavor, let cream of chicken soup and milk reach room temperature before mixing. Leftovers can be stored for up to 3 days in an airtight container.
