  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper
  2. Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper
  3. Spread sweet potatoes evenly on baking sheet and roast for 40-45 minutes, stirring halfway through
  4. While potatoes roast, heat remaining olive oil in skillet over medium heat
  5. Add diced onion and cook until softened, about 4-5 minutes
  6. Add ground beef and taco seasoning, breaking apart with spatula, and cook until browned (8-10 minutes)
  7. Drain excess fat from beef mixture
  8. Assemble bowls by layering roasted sweet potatoes, ground beef, sliced avocado, and cottage cheese
  9. Drizzle with hot honey and garnish as desired

  • Fresh ingredients make all the difference – opt for organic when possible
  • Roasted butternut squash can substitute for sweet potatoes
  • For added richness, mix sour cream or Greek yogurt with cottage cheese
