Savory Ground Beef Orzo with Tomato Cream Sauce

  • 1 pound ground beef (80/20 recommended)
  • 1 cup orzo pasta
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup beef broth
  • Salt and pepper to taste
  • Olive oil
  • Parmesan cheese for serving (optional)

Instructions

  1. In a large skillet, heat a splash of olive oil over medium heat. Sauté the diced onion for about 3-4 minutes until translucent.
  2. Add the ground beef, breaking it apart, and cook for 5-7 minutes until browned.
  3. Stir in the diced tomatoes and beef broth, letting the mixture come to a gentle simmer.
  4. Once bubbling, stir in the orzo pasta and cook according to package instructions, about 8-10 minutes.
  5. Lower the heat, then gently stir in the heavy cream and cook for another 2-3 minutes until the sauce thickens.
  6. Season with salt and pepper to taste. Serve garnished with freshly grated Parmesan cheese if desired.

Notes

Avoid overcooking the orzo to prevent it from becoming mushy. Store leftovers in an airtight container for up to 3 days.
