Decadent Ground Beef and Potatoes Casserole

A comforting casserole combining ground beef and potatoes, perfect for family dinners.

  • 1 pound ground beef (80/20 preferred)
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and dice the potatoes into small cubes.
  3. In a large skillet, heat olive oil and sauté chopped onion and minced garlic until softened.
  4. Add ground beef, seasoning with salt, pepper, thyme, and paprika. Brown the beef completely.
  5. Pour in beef broth and simmer for 5 minutes.
  6. In a bowl, mix diced potatoes with the beef mixture, sour cream, and half of the cheddar cheese.
  7. Pour the mixture into a greased baking dish, top with remaining cheddar cheese, and cover with foil.
  8. Bake for 30 minutes, then uncover and bake for an additional 10-15 minutes until golden brown.
  9. Let the casserole rest for 10 minutes before serving.

Notes

Leftovers can be stored for 3-4 days in the fridge or frozen for up to 3 months.
