Ground Turkey Sweet Potato Casserole

A heartwarming recipe featuring a delightful blend of savory ground turkey, sweet roasted potatoes, and vibrant veggies, topped with melted cheese.

  • 1 lb (450 g) ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup spinach
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté for 2-3 minutes until fragrant.
  3. Add ground turkey to the skillet, breaking it up with a spatula. Cook for about 5-7 minutes or until browned. Season with smoked paprika, cumin, chili powder, salt, and pepper.
  4. Stir in the diced red bell pepper and spinach, cooking for another 2-3 minutes until the spinach wilts.
  5. In a separate pot, bring water to a boil and cook the diced sweet potatoes until tender (about 10 minutes). Drain and set aside.
  6. In a baking dish, layer the cooked sweet potatoes and the turkey mixture. Pour the chicken broth evenly over the top.
  7. If using cheese, sprinkle it on top of the casserole. Bake for 15-20 minutes until heated through.
  8. Let it cool slightly before serving.

Notes

This casserole can be made ahead and stored in the fridge before baking. It can also be frozen for up to 3 months.
