Gyro Meat Couscous Bowl

  • ½ tsp salt
  • ¼ tsp black pepper
  • For the Bowl:
  • 1 cup uncooked couscous
  • 1¼ cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ¼ cup crumbled feta cheese
  • ¼ cup chopped fresh parsley
  • For the Tzatziki Sauce:
  • 1 cup Greek yogurt
  • ½ cucumber, grated and drained
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • ½ tsp salt

Instructions

  1. Cook Couscous: Bring chicken broth to boil. Stir in couscous, cover, and remove from heat. Let stand 5 minutes, then fluff with fork.
  2. Make Tzatziki: Mix all sauce ingredients in bowl. Refrigerate until ready to serve.
  3. Cook Gyro Meat: Heat oil in skillet over medium-high. Add ground meat and all spices. Cook 6-8 minutes, breaking into crumbles, until browned.
  4. Assemble Bowls: Divide couscous among bowls. Top with gyro meat, tomatoes, cucumber, red onion, and olives.
  5. Finish: Drizzle with tzatziki sauce. Sprinkle with feta and parsley. Serve with lemon wedges if desired.
